When it comes to functional foods, one number tends to dominate: how many milligrams per serve?
It feels objective. Impressive. Competitive. More must be better – right? Not necessarily. Your body doesn’t respond to what’s printed on the label. It responds to what it can actually absorb and use. And that’s where bioavailability comes in.
Bioavailability is the amount of a nutrient or ingredient extracted from your gut into your bloodstream in a form your body can use. When you eat something, it doesn’t instantly go to work. First, it has to be released from the food, survive digestion, pass through the gut lining, and avoid being broken down by the liver. Only then can it circulate and do anything meaningful – and at every step, some of it is lost.
So two products can contain the exact same dose of an ingredient yet deliver very different results in the body. “Amount added” and “amount absorbed” are not the same thing.
The body tightly controls how much of certain nutrients it absorbs. Take iron – if your stores are already adequate, your body reduces absorption even when you consume a large dose. The same principle applies to many other nutrients and compounds.
Some ingredients need help to be absorbed at all. Fat-soluble vitamins require dietary fat. Certain plant compounds are rapidly converted into different forms during digestion. Minerals can compete with each other for absorption. And individual variation adds another layer of complexity – gut health, age, metabolic health, and genetics can all influence how much a person actually absorbs.
A milligram number on pack doesn’t capture any of that.
Ingredients don’t exist in isolation – they’re part of a whole food system, and that system affects how well they’re absorbed. Carotenoids like beta-carotene are absorbed far more effectively when consumed with fat. Vitamin C can enhance iron absorption. Conversely, certain naturally occurring compounds in grains can reduce mineral absorption.
Processing, cooking, emulsifying, or encapsulating an ingredient can also change its bioavailability significantly. When brands compare doses without considering the overall formulation, they’re often missing a substantial part of the picture.
Not all forms of a nutrient behave the same way in the body. Different mineral salts dissolve differently. Some forms are more stable. Some are absorbed more efficiently. In certain cases, a smaller amount of a well-absorbed form can deliver more benefit than a larger amount of a poorly absorbed one.
Asking “how much is in it?” isn’t enough. You also need to ask what form it’s in – and whether that specific form has been shown to produce a meaningful effect in humans.
Ultimately, what matters most isn’t the number on the label – it’s whether the finished product has been shown to produce a meaningful effect in people. Well-designed human studies automatically account for absorption, metabolism, and regulation because they measure real outcomes in real bodies.
If the research underpinning a claim was conducted using a different dose, a different form, or a completely different product, you cannot assume the same result will occur in yours. That’s where scientific credibility either holds up or falls apart.
Dose is easy to market. Bioavailability is harder to explain. But it’s bioavailability – not the raw number – that determines whether an ingredient can genuinely do what it claims.
The better question isn’t “how much can we add?” It’s “how much will the body actually use?” That level of thinking is what separates strong, defensible products from those relying on impressive-sounding numbers alone.
